What kinds of oil do you use in your restaurants?Updated a year ago
There are three different types of oil we use in our restaurants, each serving a different purpose:
Frying
In our fryers, we use sustainably farmed organic palm oil (Palm Done Right certified) from Natural Habitats. Organic palm oils are low in polyunsaturated fats, especially omega 3 fats, while being high in monounsaturated fats. This offers the best balance of nutritional benefits and stability at high temperatures.
Sautéing
We use rice bran oil for sautéing. Rice bran oil has a high smoke point, making it great for use in the wok. It is also considered to be a good source of several vitamins and minerals, and contains mono-unsaturated fat.
Dressings
We use grapeseed oil for our salad dressings. Grapeseed oil is similar in many ways to olive oil, and provides a neutral base for delicious vinegars and flavorings to shine. Grapeseed oil is also high in vitamin E, which has antioxidant properties.
